 Yes, alcohol consumption does change the flavor and texture of a man's ejaculate. If your partner is having issues with unpleasant tasting ejaculate, have him eliminate red meat, garlic, onions, salty foods, curries, alcohol, illegal drugs, tobacco and carbonated beverages.
Have him increase the amount of fruits and vegetables he eats, especially celery, apples, bananas, pineapples, tomatoes, eggplant, corn and carrots...also have him drink lots of water.

 Based on reports from ladies (because I'm a man and do not know), excessive alcohol does make cum more bitter than it already tastes. That is why I usually eat more fruit or drink pineapple juice a day or two before such activity.
