 You should tell her you're a virgin. Lies are never good for relationships.
However, I'm really concerned about the age difference, more than anything else. You should wait until you're older, when the age difference won't mean as much. If you're still into her when you're 21, then perhaps it's a relationship that's meant to be. But for now, please wait.

 Dextro69, I guess you could call the writer a lucky man, and maybe it is true that having an older woman is "every teenage boy's dream". I don't believe it's every teenage girl's dream, however. And the last time I checked, "Female - Age 16 -17" was a girl (or young woman).
17 - 31 is a pretty big age difference in any sexual relationship. I'd think long and hard (no pun intended) before I lost my virginity to the "older woman".

You should tell her,
tho there is no way she can find out or not it is always best to be honest in any relationship.
as she is an older women whe will be far more understanding as to the white lie you have told her. teenagers tend to brag about the amount of expereance that they have had and nearly always streach the truth a bit.
she should understand why you told her what you did and if she is any sort of women relise it was a silly mistake because of your age and fogive you easily. also it will help her to help make your first time even more special.
remember she wont exspect you to be a super studd anyway, been good at sex takes time to learn been great takes love and understaning of your partners needs.
