 Just tell him like you told us. That you don't need sex everyday to assure his love for you. That you need the cuddling, kissing, regular affection just minus all the sex. Explain that sex daily gets too redundant and less exciting becoming too routine. You like the spontaneousness. Plus, tell him you need a break because you're starting to get sore down south from being in so much use. Our parts need a break.
