I would recommend thinking about it when you are away from him and you don't feel the pressure of the sitution crwding your mind. Perhaps you could even write a few things down - what might you say to him if he were there to express how you feel, like if he makes you feel happy/beautiful/safe; or just the things about him that make him special to you or the things he does that you appreciate.
Write down a list of things that you could say or that you love about him, and next time you feel you would like to say something back to him, take a deep breath, smile, and tell him something true that you feel or like about him.
