 First and foremost, I would like to commend you on a positive attitude. As others have said, certain foods do have a positive or negative effect of sperm flavor. Adjust his diet and see if it improves taste. If that doesn't work, instead of swallowing, have him pull out before he ejaculates and either finish him off by hand, or let him cum elsewhere. My ex didn't like the taste either, and instead of finishing me off, we used bjs as a precurser to sex.
I have to agree, condoms and bjs are not a good combo. If all else fails, make sure you have a chaser (my wife likes cherry coke) on the night stand.

 Why does he have to cum in your mouth? Finish him off with your hand so you wont get sperm in your mouth. If you are bothered by the pre-cum as well, there's several things to do:
-don't lick the tip where the pre-cum comes out, but around the shaft and rim
-have him eat pineapples to enhance the flavpur of his sperm (it is said to have an effect on the tase... he should also avoid red meats)
-continue experimenting with condoms. By ultra thin condoms for greater sensitivity. And work on your moves while using a condom so he will get pleasure from it. I bet that he enjoys it even with the condom on, but for him personally it is better without. You can also try flavoured condoms, condoms with nubbs etc. You can also try putting a sleeve (google if you don't know what it is) on him, preferably one with nubbs, then tread the condom over both sleeve and penis, and work away!
