It sounds like this is early days? If you've only been seeing her for a short time, maybe it just takes her a while to warm up and open up to someone she's seeing.
Maybe she's just not the naturally curious type.
Or maybe she's not that interested. I think the only way to tell is give her more time.
I've found the more you open up to people, the more they open up to you.
