Maybe drop her a hint - something like "Do you know how easy it would be to fall in love with you?", or "It wouldn't be difficult for me to take this friendship up to another level." or "I feel about as close as I could with you without being in a relationship with you."

A general comment like this I feel would not threaten your friendship and would give her an opportunity to respond in or out of favour. If this situartion was not on the cards for her she could let you know and you could resume a really good friendship, if it is on the cars you get to have your dream come true.
