Ask your mom. I think more than anything you need to learn a few things about sex and this "pregnancy thing" before you even touch your girlfriend.
If you want to have sex without condoms, then have her go on the pill. If you know so little about menstrual cycles and semen and how pregnancy actually works, then trying to figure out when you can and cannot take the risk is going to be asking for trouble.

I'm no doctor, but i've been reading that a girl can even get pregnant any time of the month, even on her period because the sperm can remain alive insider her for up to five days. Some girls can occassionally have there periods a day or two late, this is normal. As long as you GF has good hygiene then it should be fine!
And in answer to the first question, talk to your GF about going on the pill. Not only will you be able to have sex without wearing a condom (if used correctly) butttt, she will thank you for being a caring BF by thinking and talking about contraception :)

Girls CAN get pregnant if you don't use a condom in ALL cases, whether she's on her period or whether you pull out before you ejaculate, pulling out is not a gaurantee because she can get pregnant from your pre-cum.
Girls don't always eject the egg during their period either, so if you don't use any contraception there IS a chance she will get pregnant.

If you don't wanna use condoms then I suggest she goes on the pill, all it takes is one appointment with the nurse and 7 days of waiting and you can do it without condoms (although using both condoms and the pill is unregrettable.)
