On Monday we had sex and half way through he pulled out and fingered me for a short while, until I orgasmed, and then we continued. He'd fingered me before but never mid-sex but during it I never thought anything of it. It was only after when he mentioned he had 4 fingers inside me at once, that I began to freak out. His fingers aren't small, so does this mean I'm loose? Will my vagina return to it's original size? Please help.

 Your vagina will not turn into a hat, not even after having a 10 pound baby (my own personal experience). Nature has designed the vagina to have very elastic qualities, and it will always 'shrink' back into shape after arousal and sex.
If vaginas could be stretched "out of shape", the TAMPON industry would be out of business...

well obviously while having sex your vagina will extend in size to let the penis enter and you will be wet which would be a lubricant allowing big things to go in there..
after sex you will feel your vagina tightening up and to be honest this is completely normal..
just remember some people can get fists up there.

 What do you mean by "original size"? As in when you were a virgin? Probably never will return to that size no, unless you stop having sex.
This was during sex. You were expanded down there, and wet. Trying to put 4 fingers in at any other time might have even hurt you.
Why does this freak you out though? Has he complained about you being loose? Does he not enjoy sex with you? I don't think you have anything to worry about at all. If you are freaked out by it, why not ask him if he thinks you are loose? I think he might have thought it was sexy to be able to use that many fingers, and that is why he told you.
But if you want to be tighter you should work out your muscles down there by pinching them together several times a day, just like a normal work-out (the same muscle you use to stop the flow of urine).
