They then disappeared away from the party together for about an hour. I know nothing of the sexual kind happened, but when he came back he was very moody and would't even kiss me goodnight, which was quite upsetting. Anyway, the next day we were IMing and he apologised for leaving me alone while he went off with his ex, but that was almost a week ago and he hasn't called or texted since.What do you think is going on? And what should I do?

 I'm sorry to say, but I think you were the rebound girlfriend. He and his ex are probably still into each other, and you got caught in the middle.
Even if he HAD contacted you recently, how long do you plan on letting him go off with his ex and leaving you behind?
I think he's just being a coward and is breaking off with you by cutting off contact.
I suggest you do the same. Mind you don't fly to pieces and whiz around town bad-mouthing either of them. There are tons of websites out there that suggest how to get over a breakup in style. The key is to maintain your composure now and figure out what you want from your next relationship.
